Philippa Hayes
Vice President F&B Mandalay Bay Resort and Luxor Australian born and educated and raised in Hong Kong, Philippa’s early exposure to a myriad of cultures, food and travel spurred her passion for hospitality and all the culinary world could offer. Philippa began her career working all kinds of roles in wine, fine-dining and events while attending the University of Queensland in Brisbane, Australia, where she graduated with a dual degree BA of Commerce and BA of Arts. Knowing her calling was in food and wine, and lots of it, she sought out the best of that world by relocating to fabulous Las Vegas in 2005 and working with 3 Michelin starred Chef Guy Savoy in his first venture outside of France. In 2009 Philippa parlayed her extensive restaurant experience into the larger operation of The Venetian Resort where she worked her way up with progressive promotions to the role of Vice President of Food and Beverage which she held for 6 years. There, she oversaw the operations and development of the properties culinary and beverage programs; including the hotel’s celebrity chef partnered restaurants, nightlife collection, pool decks and luxury services team. |
Yancy Perez
Regional Manager border grill las vegas | bbq mexicana | pacha mamas Yancy is the regional manager for the Border Grill group. Born in Miami, Yancy moved to the Las Vegas Valley in 1981. He Attended Las Vegas High School and began his restaurant career at the young age of 15. He has been a part of the Las Vegas community for over 42 years and in the restaurant industry for over 25 years. After attending culinary school at CSN he continued to work with China Grill Management, Batali & Bastianich Hospitality and Border Grill. His focus is on creating amazing and approachable cultures within his organizations as well as memorable experiences for guests. Yancy’s results have proven several successful openings and new concept launches within the Las Vegas Valley. |
Derrick Harmon
Regional Sales Leader for Bear Robotics Derrick Harmon is the Regional Sales Leader for Bear Robotics, a cutting-edge technology that is transforming the hospitality industry with food running, bussing, and delivery robotics. He is responsible for driving the organization's revenue growth and success by leading and managing the sales team. Derrick was born and raised right here in Las Vegas and naturally gravitated towards the fast paced world of hospitality. His beginnings include bussing, serving, and bartending which propelled later into management positions. With a solid foundation built on dedication and a passion for excellence, he has accumulated invaluable experience that spans across prestigious establishments like Hilton, Mandarin Oriental Hotel Group, and Wynn Resort. Derrick's unique blend of experience and vision makes him a key player in the future of the industry. In his time outside of work, Derrick loves visiting local restaurants, watching football, and spending time with his family and friends. |
